Jason who has commercial kitchen experience and an undergraduate Business degree recently purchased a small business, which consists of two food trucks. Jason wants to expand and he is faced with a critical decision on whether to grow his food truck fleet, add catering or home meal delivery service, which became very popular in COVID. Currently, Jason has two food trucks. Each one is operated by a cook and a server/prep cook.
Truck #1 is located near an industrial area and its customer base consists predominantly from workers who are employed by companies in the area. The busiest time is mid-morning break (coffee) time and lunch. Coffee and light breakfast is served in the morning. Lunch items are hearty but nutritious and made from locally sourced ingredients. Truck #1 is open from 9 am to 2 pm Monday to Friday.
Truck #2 is located downtown near bars. It services late night bar patrons, and it's open 11 pm to 3 am Wednesday to Saturday. It offers mostly deep-fried and less healthy options to its customers.
