Part A
The student will research an Indigenous or Canadian chef who has made a difference in the foodservice industry through their contribution and interpretation of cuisine. The student will do research, a planning sheet (to organize your ideas before writing), writing a five or more-paragraph biographical essay. The student may choose to present their essay in an alternative format to write, such as visually (visual essay), auditorily (podcast) digitally (SlideShare). Please confirm with your instructor. Your research needs to be cited from a minimum of 3 different sources, one of which must be a cookbook, published biography, blog or official organization. To include in your biography report must be a cited page (biography resources), links to several examples, handouts and websites that may be useful to you while working on this project.
Part B
The student will create an inspired Canadian dish (entrée, starch and vegetable) that is representative of course learning to include Canadian local and sustainable ingredients, flavour profiles and methodologies representative of Canadian regional cuisine. The student will provide a recipe(s) and summary to explain how their recipe is representative of the course learning. Through research and independent study, the student will apply critical thinking skills, gain a better understanding of contemporary menus, menu trends and sustainable principles for the Canadian Foodservice Industry. Also, completing the list using word processing skills, the student will gain the necessary word processing computer skills used in today's foodservice environment.

Review the course content and resources provided in the list below and decide on a chef you are interested in learning more about. Think about the chef's traditions, beliefs, values, and experience how they have contributed to the Canadian foodservice industry positively, making a difference in their local, national or global community.

You can resource information through books, magazines, videos, course content sources, websites, blogs, interviews, news feeds, library resources, and social media etc. Make sure to use a variety of resources (minimum of 3 different ones) when researching.

Michael Dixon Smith is a preeminent American Canadian chef and a cookbook writer. He was born on 12th October 1966 in New York City. Michael attended art school at the age of seventeen, where he started cooking in the kitchen. His parents, Margret Ann and Ralph Smith, played a significant role in building his career life. They allowed him to cook in the kitchen while still studying. In 1991, he graduated from the Culinary Institute of America. After school, he worked in South Americans restaurant and later moved to North America, where he started cooking for different restaurants. In 1992, he started working in the Prince Edward Islands, and after six years, he opened his restaurant. Additionally, Smith is a passionate advocate of his cooking skills, which significantly influenced his future success.
Michael Smith created several cooking documentaries showcasing his cooking interpretations, cooking approach, and perspective about food. Also, he wrote different cookbooks, presenting his favourite food recipes with different flavours. When presenting these recipes, he included food photographs, ingredients, and steps to make different foodstuffs.
